25 Best Keto Coleslaw Recipes (Creamy, Crunchy, No Sugar)
Because the bowl at the cookout should be yours too. All 25 full recipes, five 5-minute dressings, and the one trick that ends watery slaw for good.
You know the moment. Everyone’s loading plates at the barbecue, the pulled pork is perfect, and the coleslaw sits there… sweet, glossy, and quietly off-limits. So you skip it. Then you try making a keto version at home, and by day two it’s a bowl of cabbage soup with a sad puddle at the bottom. 😞
If that’s been your experience, it was never your fault. Store-bought slaw hides sugar in the dressing, and nobody ever told you cabbage is about 90% water just waiting to escape.
This guide fixes both. You’ll get dressings with no sugar, a salt-and-drain method that keeps slaw crisp for days, and complete recipes you can make on a Sunday and enjoy all week.
💧 The Watery-Slaw Fix: Salt, Drain, Squeeze
Salt pulls water out of cabbage cells before the dressing ever touches them. Your dressing stays thick instead of getting diluted.
- Salt: toss 1 pound (about 5 cups) shredded cabbage with 1 teaspoon kosher salt in a colander.
- Wait 30–60 minutes. Put a bowl underneath. You’ll be surprised how much liquid appears.
- Squeeze: press the cabbage hard in a clean kitchen towel or with your hands. Don’t rinse unless it tastes very salty.
- Season lightly: cut the salt in your dressing to about ¼ teaspoon, then taste.
| Dressing style | Ratio per 1 lb cabbage | Dress it… |
|---|---|---|
| Creamy | ½ cup mayo + 2 tbsp sour cream + 1 tbsp acid | 1–2 hours before serving |
| Vinegar (Carolina) | ¼ cup vinegar + 3 tbsp oil | Up to 24 hours ahead |
| Asian sesame | 3 tbsp oil + 2 tbsp vinegar + 1 tbsp sesame oil | 15 minutes before |

❓ Quick Answers
Is coleslaw keto?
Restaurant and store-bought coleslaw usually isn’t, because the dressing contains added sugar. Cabbage itself is low in net carbs, and the recipes above use a pinch of sweetener.
Can I use bagged coleslaw mix?
Yes. Buy plain shredded cabbage, not a kit with a dressing packet, and still salt and drain it. It’s a great shortcut.
How long does it last in the fridge?
Creamy slaw: 2–3 days, getting softer daily. Vinegar and broccoli slaw: 4–5 days. For the longest life, store dressing and cabbage separately.
Mayo or vinegar: which is better?
Neither wins. Mayo gives richness and holds a few days; vinegar is lighter and lasts longer. Use vinegar with fatty meats, mayo with lean ones.
Can I make it dairy-free?
Yes. Use avocado-oil mayo and skip the sour cream, or choose the Carolina and Asian recipes, which are dairy-free as written.
Bring the bowl. Take home none of it. 🥬
Start with the classic, salt your cabbage, and let the dressing do its thing. Your next cookout just got a lot more delicious.
