The 5 golden rules of great keto soup
Learn these once and every recipe below gets easier, and you can improvise with confidence.
Fat carries flavor
Cook aromatics in butter, bacon fat or olive oil. Fat is the carrier for every spice and the reason keto soup feels satisfying.
Salt in layers
Season the aromatics, season the broth, then season at the end. Low-carb soups need more salt than you think, especially with cream.
Finish with acid
A teaspoon of lemon juice or vinegar at the end makes a heavy soup taste fresh. It adds almost no carbs.
Add umami
Tomato paste, parmesan, mushrooms, Worcestershire or coconut aminos give the deep savory note that flour-and-potato soups get for free.
Gentle heat for dairy
Boiling cream and cheese is how soups split. Keep it at a bare simmer, then add dairy on low.

01 Crack Chicken SoupFeaturedChicken, bacon, ranch and cheddar in a silky broth. The soup people make once and then make weekly. ⏱ 35 min🥑 4g net
This is the soup for the night when you want dinner to feel like a hug. It’s rich, salty, a little tangy and ready before the kids finish their homework.
- 🍽 Serves 6
- ⏱ Total 35 min
- 🥑 About 4 g net carbs / serving
🛒 Ingredients
👩🍳 Method
- Cook the bacon in a large pot over medium heat for 8 to 10 minutes until crisp. Move it to a paper towel and pour off all but 1 tablespoon of fat.
- Add the onion to the bacon fat and cook 4 minutes until soft. Stir in the garlic for 30 seconds, until fragrant.
- Pour in the broth, scraping up the browned bits. Bring to a gentle simmer, then drop in the cream cheese cubes and whisk for 3 to 4 minutes until completely smooth.
- Stir in the cream and ranch seasoning. Add the chicken and simmer gently for 10 minutes so the flavors move in. Do not let it boil hard.
- Turn the heat to low. Add the cheddar a handful at a time, stirring until each addition melts before the next.
- Check thickness. If you want it more like a chowder, sprinkle in the xanthan gum while whisking, then wait 3 minutes before judging.
- Ladle into bowls and top with the bacon and green onions.
Pro tip: Check your ranch packet label. Most have about 1 g of carbs per serving, but some contain more starch fillers. The homemade mix is carb-free.
02 Broccoli Cheddar SoupFeaturedVelvety, cheesy and honestly better than the café version. No flour, no grit. ⏱ 35 min🥑 6g net
If broccoli cheddar was the soup you missed most when you started keto, this one is for you. It tastes familiar and a little nostalgic.
- 🍽 Serves 4
- ⏱ Total 35 min
- 🥑 About 6 g net carbs / serving
🛒 Ingredients
👩🍳 Method
- Melt the butter in a large pot over medium heat. Cook the onion for 4 minutes, then add the garlic for 30 seconds.
- Pour in the broth and cream. Bring to a bare simmer, not a boil.
- Add the broccoli (and carrot, if using). Simmer 10 to 12 minutes, until the broccoli is very tender.
- Use an immersion blender and pulse 3 or 4 times. You want some of the soup smooth and some broccoli pieces left. No blender? Mash with a potato masher.
- Lower the heat. Whisk in the cream cheese until melted.
- Add the cheddar one handful at a time, stirring until smooth. Season with paprika, nutmeg, salt and pepper.
- Serve topped with extra cheese. The soup thickens as it rests, so thin with a splash of broth if needed.
Pro tip: Shred your own cheese. Bagged shredded cheese is coated with anti-caking starch that makes soup grainy. A block of cheddar takes 90 seconds to grate and fixes the problem.
03 Roasted Garlic Cauliflower SoupFeaturedRoasting turns cauliflower sweet and nutty, and a whole head of garlic does the rest. ⏱ 55 min🥑 5g net
Quiet, silky and elegant. It’s the bowl you make when you want to feel looked after.

👩🍳 Method
- Heat the oven to 425°F (220°C). Toss cauliflower with 2 tbsp oil and ½ tsp salt on a sheet pan.
- Slice the top off the garlic head, drizzle with 1 tbsp oil, wrap in foil and set it on the pan. Roast 25 to 30 minutes, until the cauliflower has golden edges.
- Meanwhile, melt the butter in a large pot and cook the onion for 5 minutes.
- Add the roasted cauliflower, squeeze in the soft garlic cloves, and pour in the broth. Simmer 10 minutes.
- Blend until completely silky, 1 to 2 minutes in a blender (vent the lid) or longer with an immersion blender.
- Stir in the cream, nutmeg, white pepper and parmesan. Thin with extra broth if needed. Taste and add salt.
- Serve with a swirl of olive oil, chives and crispy bacon.
Pro tip: The browning is the flavor. Boiled cauliflower tastes like cabbage water. Roasted cauliflower tastes like something you’d order at a restaurant.
04 Creamy Tuscan Chicken SoupFeaturedSun-dried tomatoes, garlic, parmesan and spinach in a luscious Tuscan-style broth. ⏱ 35 min🥑 5g net

- Add the broth and Italian seasoning, scraping the bottom. Return the chicken, simmer 10 to 12 minutes until cooked through.
- Lower the heat. Stir in the cream and parmesan until smooth.
- Add the spinach and cook 2 minutes until wilted. Taste and adjust the salt. Serve hot.

- 🍽 Serves 4

- Pour in the sherry (if using), scrape the pot, then add the broth and coconut aminos. Simmer 10 minutes.
- Blend about half of the soup, leaving the rest chunky. Return the mushrooms, stir in the cream and warm through. Season well.

- Turn off the heat and stir in the sour cream. Season, then top with bacon, cheese and chives.

Which soups freeze best?
🥄 How to thicken keto soup without flour
A thin, watery soup is the most common complaint. Here are eight ways to get a spoon-coating texture without flour, cornstarch or potatoes. Mix and match.
Simmer & reduce
Uncovered, 10 to 15 minutes. Free and flavorful, but it concentrates salt, so season at the end.
Blend a portion
Blend one-third to half of the soup and stir it back in. Great for vegetable soups.
Cauliflower purée
Stir in 1 cup steamed, puréed cauliflower per 4 cups of soup. Thick and neutral in flavor.
Cream cheese
Whisk in 2 to 4 oz per 4 to 6 cups on low heat. Adds body and a little tang.
Xanthan gum
Start with ⅛ tsp per 4 cups. Sprinkle while whisking or blending, wait 3 minutes, then decide. Too much turns slimy.
Egg yolk liaison
Whisk 2 yolks with a ladle of hot soup, then stir back in off the boil. Never let it boil after.
Glucomannan
A pinch (about ¼ tsp) whisked into a small amount of cool broth first, then stirred in.
Parmesan or cheese
Stir in ¼ to ½ cup finely grated parmesan. It thickens and adds savory depth.
Keto soup FAQs
Is soup keto-friendly?
Yes, as long as you avoid flour, potatoes, noodles, sugar and starchy thickeners. Watch the hidden carbs in onions, carrots and tomatoes, and read labels on broth, ranch packets and sauces.
Why did my cheese go grainy?
Usually one of three things: pre-shredded cheese with anti-caking starch, soup that’s too hot, or adding cheese all at once. Shred a block, lower the heat and stir it in by the handful.
My cream soup curdled. Can I fix it?
Take it off the heat and whisk in a splash of cold cream. If it’s still grainy, blend with an immersion blender. Next time, keep dairy below a simmer and add lemon or vinegar after the heat is off.
What if my soup is too salty?
Add more unsalted broth or a splash of cream to dilute it, then add a little acid like lemon. Potatoes don’t help much, and they add carbs.
How do I thicken keto soup without flour?
Reduce it, blend part of it, stir in cream cheese or cauliflower purée, or use a tiny amount of xanthan gum. See the 8 methods above for amounts.
Can I make these soups dairy-free?
Yes. Use full-fat coconut milk or coconut cream in place of heavy cream, olive oil or avocado oil in place of butter, and nutritional yeast for a cheesy note. Skip the cheese toppings.
How long do keto soups last?
Refrigerated in airtight containers, most last 3 to 4 days. Cool within 2 hours of cooking. Freeze for up to 3 months.
Can I use a slow cooker or Instant Pot?
Yes. These recipes are written for the stovetop, but meat-based soups adapt well. For a slow cooker, cook on low 4 to 6 hours and add dairy during the last 30 minutes. For a pressure cooker, brown first and pressure cook 10 to 15 minutes, then add dairy after.
How do I lower net carbs even further?
Use smaller portions of onion and tomato, replace carrots with celery, skip optional vegetables, and weigh ingredients. Net carbs are estimates, so check your own brands.
