Creamy White Chicken Lasagna Soup
All the comfort of lasagna, none of the hour-long layering — ready in one pot in under 40 minutes.
There’s a very specific kind of tired that only a bowl of soup can fix — the end-of-a-long-week, hands-still-cold, “I don’t want to cook but I also don’t want cereal for dinner” kind. That’s the exact mood this soup was built for.
It tastes like the inside of a lasagna dish — the béchamel, the ricotta, the melted mozzarella — except it’s spoonable, it’s fast, and it doesn’t leave you with a sink full of pans. Tender shredded chicken, soft pasta ribbons (or a low-carb swap if you’re watching carbs), sweet carrots, and broccoli all sit in a garlicky, parmesan-laced cream base. A scatter of golden, oven-crisped croutons on top means every spoonful has something to bite into, not just something to sip.
This isn’t a “diet” version of soup that tastes like a compromise. It’s the real, rich, coat-the-spoon thing — just built smart enough that you can actually make it on a Tuesday.
The Real Problems This Recipe Solves
Layering, boiling noodles separately, baking, waiting for it to set — lasagna is a weekend project. This soup gives you every flavor note in one pot, 35 minutes, zero layering.
Add dairy too fast over high heat and you get grainy, oily soup. We show you the exact order and temperature to keep it silky every time.
Broccoli and carrots get finely diced and hidden in a rich, cheesy base kids already love — no negotiation required at the table.
Regular egg noodles work perfectly, but we include a tested low-carb swap so this fits a keto or low-carb plate without losing the “pasta” bite.
Why This Recipe Actually Works
- Rotisserie chicken shortcut: pre-cooked shredded chicken means no separate step, no dry chicken, no wasted time.
- Flour-butter roux base: builds body into the broth before the cream ever hits the pot, so it thickens naturally instead of relying on heavy cream alone.
- Ricotta stirred in off-heat: keeps that classic lasagna creaminess without curdling.
- Broiled parmesan croutons: that “crispy top layer” feeling from baked lasagna, recreated in 4 minutes under the broiler.
Creamy White Chicken Lasagna Soup
Cozy, cheesy, one-pot comfort — with a low-carb option built in.
Ingredients
- 2 tbsp butter
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 2 medium carrots, diced small
- 1 cup broccoli florets, chopped small
- 3 tbsp all-purpose flour (or 1 tbsp glucomannan for low-carb)
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup whole milk ricotta
- 2 cups cooked, shredded rotisserie chicken
- 6 oz broken lasagna noodles or egg noodles (or low-carb noodle swap — see note)
- 3/4 cup grated parmesan, divided
- 1 tsp Italian seasoning
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped, to serve
- For the croutons: 1.5 cups cubed bread (or low-carb bread), 2 tbsp olive oil, 1/4 cup parmesan
Instructions
- Build the flavor base. Melt butter in a large Dutch oven over medium heat. Add onion and carrots, cook 5 minutes until softened. Stir in garlic and broccoli, cook 1 minute more until fragrant.
- Make the roux. Sprinkle flour over the vegetables and stir constantly for 1–2 minutes to cook off the raw taste — this is what keeps your soup from ever tasting starchy.
- Add the broth slowly. Pour in the chicken broth a little at a time, whisking as you go, so no lumps form. Bring to a gentle simmer.
- Cook the noodles right in the pot. Add the noodles and simmer 8–10 minutes, or until just tender, stirring occasionally so nothing sticks.
- Lower the heat before adding dairy. This is the step that prevents splitting. Reduce to low, then stir in the heavy cream, Italian seasoning, and smoked paprika.
- Stir in ricotta off the heat. Remove the pot from direct heat for a moment, stir in the ricotta and half the parmesan until fully melted and smooth.
- Add the chicken. Fold in the shredded chicken and let everything warm through for 3–4 minutes on low. Season with salt and pepper to taste.
- Make the croutons. While the soup simmers, toss bread cubes with olive oil and parmesan, spread on a tray, and broil 3–4 minutes until deep golden, watching closely.
- Serve. Ladle into bowls, top with croutons, remaining parmesan, and fresh parsley. Serve immediately while the croutons are still crisp.
If you’re making this ahead, cook the noodles separately and add them to each bowl right before serving. Pasta keeps absorbing liquid in the fridge, and by day two you’ll have a very thick stew instead of a soup — still delicious, just different.
Make It Your Own
Spicy Kick
Add 1/2 tsp red pepper flakes with the garlic, or a dash of hot sauce at the table.
Extra Green
Stir in a handful of baby spinach in the last 2 minutes of cooking for a nutrient boost.
Dairy-Lighter
Swap heavy cream for half-and-half and skip the ricotta for a lighter, thinner soup.
Common Questions
Can I use raw chicken instead of rotisserie?
Yes — dice 1.5 lbs boneless chicken breast or thighs and sear it in the butter before adding the vegetables in step 1. Remove it, cook the vegetables as directed, then add the chicken back in step 7.
Why did my soup turn out grainy?
This almost always means the dairy hit heat that was too high. Always drop to low heat before adding cream and ricotta, and never let the soup come back to a hard boil afterward.
Can I freeze this soup?
The cream base freezes reasonably well, but the noodles turn mushy. For the best results, freeze the soup without noodles and cook fresh noodles to add after reheating.
How do I keep the croutons crispy on leftovers?
Store croutons separately in a paper-towel-lined container at room temperature, and add them fresh to each reheated bowl rather than storing them in the soup.
