- Rice cauliflower in a food processor or grate on box grater. Pat very dry.
- Stir-fry chicken in sesame oil on high heat until cooked. Remove.
- Scramble eggs in the same pan. Push to one side.
- Add garlic and ginger. Add cauliflower rice. Cook 5 min, stirring frequently.
- Add soy sauce. Toss everything together with the chicken.

- 2 fresh tuna steaks (200g each)
- 2 ripe avocados, diced
- 1 small red onion, finely diced
- 1 lime, juiced
- Fresh cilantro, diced jalapeño
- Blackening spice: paprika, cayenne, garlic powder, thyme, salt
- 1 tbsp avocado oil
- Mix avocado, red onion, cilantro, jalapeño, and lime juice. Set aside.
- Make blackening spice blend. Rub all over tuna steaks generously.
- Heat avocado oil in a cast-iron skillet until smoking hot.

- Season chicken with salt and pepper. Heat oil in an oven-safe skillet.

- Sauté spinach and garlic in 1 tbsp oil until wilted. Cool slightly. Mix with feta, oregano, lemon zest.
- Cut a pocket in each chicken breast without slicing all the way through.
- Stuff each breast with the spinach-feta mixture. Secure with toothpicks.
- Season outside with salt, pepper, and oregano.
- Sear in oil over medium-high heat, 4 min per side.
- Finish in 200°C oven for 10 min. Rest 3 min, remove toothpicks, and serve.
- 500g sirloin, thinly sliced against grain
- 4 cups broccoli florets
- 3 cloves garlic + 1 tsp ginger
- 3 tbsp coconut aminos (or soy sauce)
- 1 tbsp sesame oil
- 1 tsp xanthan gum (to thicken sauce)
- ½ cup beef broth
- Red pepper flakes, sesame seeds
- Blanch broccoli 2 min in boiling water. Drain and set aside.
- Whisk coconut aminos, beef broth, and xanthan gum for the sauce. Set aside.
- Stir-fry beef in smoking-hot sesame oil for 2 min. Remove.
- Stir-fry garlic and ginger for 30 seconds. Add broccoli.
- Pour in sauce. Cook 2 min until thickened. Add beef back.
- Toss everything. Top with sesame seeds and pepper flakes. Serve hot.
- 300g Spanish chorizo, diced
- 4 cups cauliflower, small pieces
- 1 red onion, diced
- 1 red bell pepper, diced
- 4 large eggs
- 2 tsp smoked paprika
- 2 tbsp olive oil
- Fresh parsley, salt, pepper
- Cook chorizo in oil over medium-high until crispy, about 4 min. Remove.
- Add cauliflower to the chorizo fat. Press flat, cook 4 min undisturbed for browning.
- Add onion and bell pepper. Toss and cook 5 min until softened.
- Return chorizo. Season with paprika, salt, and pepper. Toss well.
- Create 4 wells in the hash. Crack an egg into each well.
- Cover and cook 3–4 min until whites set but yolks remain runny. Garnish and serve.
